Established in 1921, we are a fourth generation Sausage Maker’s and pride ourselves on our quality of service and flavorful food which has been feeding the people of Cork for over 10 decades.
We mix a blend of the old and new, drawing on international food cultures and using the finest of meats, fruits, vegetables, herbs and spices to bring our valued customers, as we like to say, Proper Sausages.
Our company spans the length and breath of Cork and Munster, with our retail packs available in SuperValu, Tesco, and Dunnes Stores. Our sausage factory is located just 15-minutes from Cork city centre and our customers can enjoy an O’Flynn’s Gourmet sandwich from our home in the English Market, or Fast-Casual Restaurant on Winthrop St.
The company is a traditional Irish Family Business, where Declan (pictured below) runs the company with his wife, Anne. His brother, Dave, manages the sales team, whilst Declan & Anne’s son, Jordan, manages the businesses social media accounts.

The English Market, Cork City
Situated in the heart of Cork city, the English Market is a roofed food market which has been trading since 1788, where it has survived famine, flood, and war to become one of the most iconic symbols of Irish food culture. The market is one of the oldest municipal markets of its kind in the world, where we are proud to boast our own sausage stall, where we have a range of over 50 sausage varieties complimented with a selection of gourmet burgers, meatballs, and black & white pudding.
Eat-in or take-out one of our many signature Gourmet Sausage Sandwiches from ‘The Hatch’ at Winthrop Street. Try ‘the Cork Boi’ with your choice of sausage served in a freshly baked roll with relish, caramelised onion, ketchup, and mayo. This is Street Food, Cork-style.
