Carbonara with O'Flynn's Garlic & Herb Sausages

Learn how to make this tasty Carbonara with O’Flynn’s Garlic & Herb Sausages.

Our Garlic & Herb Sausages use pork sourced form West Cork and made with a blend of roasted garlic and mixed herbs. You can find these gourmet sausages in Cork’s English Market or from selected stores nationwide.

Tip:

  • Another great option for this dish is our Cracked Black Pepper sausage.

INGREDIENTS:

  • 2 O’Flynn’s Garlic & Herb Gourmet Sausages.
  • 1 small red onion – diced.
  • 2-3 spring onions – sliced.
  • 1 clove of garlic – minced.
  • 200g tagliatelle.
  • 2 eggs.
  • 75g grated parmesan.
  • Milk.
  • Salt.
  • Black pepper.
  • Oregano.
  • Parsley.
  • Spring onion – green end, sliced to garnish.

METHOD:

  1. Fry O’Flynn’s Gourmet Sausages for 10-12 minutes.
  2. Remove from pan once cooked and slice into small pieces.
  3. Sautée minced garlic, spring onion & red onion in a pan for 3 minutes.
  4. Add in sausage slices to the pan and cook everything together on a low heat.
  5. Boil a pot of water and cook pasta for 10 minutes.
  6. While pasta cooks, whisk together the eggs, parmesan, milk, salt, pepper & oregano to create a sauce mixture.
  7. Drain the pasta once cooked. Pour the sauce into the pot with the pasta & stir continuously on the lowest heat for 1-2 minutes until its creamy – DO NOT let it scramble!
  8. Mix the sausages & onions into the pot and stir through the pasta and sauce until fully combined.
  9. Serve with parsley and the green end of a spring onion to garnish.
  10. Enjoy!
