THE LIAM O’FLYNN

The O’Flynn brothers created The 'Liam O'Flynn' sausage as an ode to their Father Liam. Their father worked in the meat business all his life in different butcher shops throughout Cork. Liam O’Flynn taught his sons that butchering was a hard trade, but encourage that with hard work they could become masters of their craft. The O'Flynn brothers were delighted when this sausage went on to win gold at the Great Taste Awards.

This mildly spiced traditional sausage is made from pork sourced from West Cork and is perfect for breakfast or lunch.

THE SWEET ITALIAN

Using a traditional recipe, we create the sweet Italian pork sausage with a blend of Italian herbs & spices. The team create this great taste award winning sausage using a carefully selected blend of paprika, fennel, garlic and mixed herbs including oregano.

This sausage has a distinct sweetness, that flavour comes from the fennel seeds used.The Sweet Italian Sausage derives from the American/Italian communities in North America and much publicised in American TV shows most notably ”The Sopranos“.

The Cork Boi

"The Cork Boi" is inspired by the area which our family originated in the early 1900's. At the time, Cork was a hive of activity with local family butchers, The Butter Exchange, The English Market, Shandon Bells and of course Murphy's brewery. A tribute to all things Cork!

Habenero & Green Chilli Sausage

Heat things up with our Habanero & Green Chilli Sausages This is our spiciest Sausage and is perfect to elevate the spice level in any meal. The Habenero Chilli is a hot variety of chilli pepper and it’s heat flavour and floral aroma are perfect for spicy sausages.

We added a little green chilli, chopped garlic, seasoning and spices to minced pork and filled it into our sausage casings. We wanted to make a hot spicy Mexican style sausage that can be used  in many recipes, whether adding to a spicy Mexican chilli or buritto this adds a lot of heat and gives a fresh and full flavour to any recipe
